INGREDIENTS

  • 2 1/2 cups vegetable broth
  • 8 ounces pearl couscous
  • 5 ounces fresh basil, stemmed
  • salt and freshly ground black pepper
  • 1 TBSP olive oil



DIRECTIONS

  1. Bring the vegetable broth to a boil in a medium-size saucepan over medium-high heat.
  2. Add the couscous to the pan then reduce the heat to medium-low and simmer for about 8 minutes.
  3. Drain the couscous, reserving the liquid.
  4. Add the basil, 1/4 tsp salt, 1/4 tsp pepper and the reserved cooking liquid into a blender and blend until completely smooth.
  5. Put the couscous and basil sauce into a large bowl then toss to coat.
  6. Drizzle the couscous with olive oil then season with salt & pepper to taste.
